Thanks to Shawn and Colleen for this great bite. Everyone likes a hot meal, but not everyone likes the time it takes. This is a quick, healthy, and meatless snack everyone can enjoy!
-Tortilla (wheat if you wish)
-Favorite cheese (mozzarella is quite nice!)
Butter tortilla, place on a non-stick pan at medium heat. Place 2 to 3 slices of cheese (1/2 cup of shredded, but hey who actually measures?) on the tortilla followed with a touch of pepper. Melt the cheese, crisp the ’tilla, and then remove from heat. Add tomato slices and mayo or mustard.
