Thanks to Heather for this original breakfast dish.
-Cheese of choice (mexican blend shredded would be nice)
-1 to 2 Eggs
-Black bean & corn salsa (Mix a drained can of black beans, canned corn, canned green chilies, cayenne pepper powder, fresh lime juice, and a couple pinches of salt in a bowl)
Spray down your skillet with non-stick spray. Whip the eggs with a pinch or so of cayenne pepper and a splash of milk. Scramble eggs and set aside on a plate. Respray your skillet, set in your tortilla over medium-low heat. Place eggs on top of tilla and scoop on some bean/corn salsa and shredded cheese of choice. Cover with another tortilla and cook both sides. Serve with a slice of lime for flavor. Enjoy!
